Apple Pie Bliss Balls
Who needs dessert when these bliss balls taste just like apple pie? The combination of apple, cinnamon and pecans is scrumptious and reminds me of the apple pies my mum used to bake when I was younger.
The difference is that these bite-sized treats are full of nourishing ingredients that make them perfect as an afternoon snack or a sweet treat after dinner.
Though I do feel it’s my duty to let you know that these taste amazing, and you may want to eat the whole batch in one go! You have been warned...
APPLE PIE BLISS BALLS
Makes 16
Ingredients
1 large red apple, grated (skin on is fine)
5 dates
½ cup pecans
1½ cups of almonds or 1 cup almond meal
1½ cups shredded or desiccated coconut, plus extra ½ cup for coating
2 teaspoons cinnamon
1 tablespoon sweetener (I use rice malt syrup)
Pinch of sea salt
Method
- Mix apple, dates, pecans and almonds/almond meal in a food processor until well combined.
- Transfer the mixture to a bowl and add 1½ cups coconut, sweetener, cinnamon and salt. Mix well.
- Using your hands to roll into small balls (approx. 1 tablespoon of mixture each), then coat with the remaining coconut. Store in the fridge. And you're done!
